How it heats
Graphene wire runs across the whole base rather than a coil in the middle, so there is no hot spot burning one dish while the far corner goes cold. It reaches temperature in about eight seconds. You set the level on the display — 95°F for bread and plates, up near 212°F for a casserole you want steaming — and the timer switches it off on its own up to ten hours later, which is the part that lets you leave the room.

What it will not do
It keeps hot food hot. It will not cook, and it will not bring a cold dish back up to temperature — 212°F at the surface is holding heat, not reheating. Food goes on it hot, straight from the pan. It is also a mat, not a hob: no pans on the heat, no cutting on it, and it wants a flat surface underneath.
